PR includes the unit test to test the added health check implementation
feature.
# What does this PR do?
Adds a new endpoint that is compatible with OpenAI for embeddings api.
`/openai/v1/embeddings`
Added providers for OpenAI, LiteLLM and SentenceTransformer.
