test(client-sdk): Update embedding test types to use latest imports (#1203) 
# What does this PR do?
- Updates ImageContentItemImageURL import
- fixes `embedding_dimensions` metadata param

## Test Plan
- Ran pytest locally, verified embedding tests pass with new types
